With regard to how autopilot would work in bad weather, it doesn't. Autopilot won't engage if the conditions are bad or it can't see road markings. It beeps a lot and warns the driver if conditions change and it needs to turn off autopilot.
With regard to the suggestion that the autopilot turn off if the driver isn't holding the wheel, it does exactly that after beeping loudly and the instrument panel flashing red. It then refuses to turn on for the rest of the journey.
With regard to the autopilot swerving, there's a fairly gentle bend on a brow on the A1 northbound heading towards Leeds that often catches it out so I can believe that. Whether it would actually crash, I can't tell you but it tries to turn the wheel in a way I don't want it to. At this point the fact that I'm holding it stops the wheel turn and autopilot turns off. It only seems to do it in the right hand lane and is certainly unnerving.
