Feel free to hack away at the binary to your hearts content, but why do you feel are entitled to the source code any more than you are entitled to the engineering schematics or CAD files that were used to build the computer your software runs on?
You are of course free design your own computer from scratch, just as you are free to write your own software.
So presumably if AP is 'dead' and can no longer sustain a business by reporting from Iraq, Iran, Afganistan, Darfur and Somalia you, Jimbo Wales and rest of the wiki-fiddlers will be on the next plane out?
No? thought not.
They are trying to protect the output of their members who worked and some cases actually risked their lives to bring the story to the eyes of the world. They might not know how to do it yet, but that doesn't make them evil. It's certainly not 'the internet's most evil company' unless they have started reporting dissidents to the Chinese authorities.
Only crime I can see here is sinning against the church of Web2.0.
Seems to me, knowing nothing about the Apple SDK that the easiest way around this is to bundle the emulator with the game and submit each game to the app store. Means you can't charge money via the appstore for the emulator (or for the games probably) but I suspect that was never the point. Don't know whether the SDK would allow the emulator to be included as a DLL, but even if it doesn't, why not a static library?
The app can then say 'Powered by iVice' or 'iFrodo inside' or just 'C64 Game - Jobs is an Arsebiscuit'. No Ts & Cs broken.

I remember DEC/Compaq migrating to SAP to replace all their bespoke in house systems so that presumably they could get rid of all those expensive database developers. In the end SAP required so much support that they had to keep all those expensive database developers as SAP consultants.
Bearing in mind that one of their in house database systems evolved into alta-vista the in house developers were not too shabby. SAP on the other hand...

I guess you must pay/get-paid by the hour then... if you can't figure out how to do a vanilla install of windows or a modern linux distro in 30-60 min then you obviously know nothing about IT and hence should not be reading this site. Perhaps you would be better off here...
