In the UK prisoners can expect pretty much no privacy when it comes to personal letters and phone calls, the prison rules allow them to be recorded or live monitored to ensure that prisoners aren't harassing victims, intimidating witnesses, continuing to commit crimes etc.
Even letters or phone calls to your legal representative can be monitored should the prison have 'reasonable cause' to believe they are being used for illegal activity.
