There are two reasons: One, if you want to be able to run say 64 bit and 32 bit software, you have to maintain both. Which costs Apple time and money. Two, if you run both 64 bit and 32 bit software at the same time, you will need 64 bit libraries and 32 bit libraries in memory at the same time, which makes the user's computer slower. Basically the last 32 bit application is really expensive.

Now on the iOS side of things, newish iPhones have processors that are not even capable of running 32 bit code - which makes them simpler, cheaper, and faster. On the macOS side, every Mac since around 2007 or so has been capable of running 64 bit code, so there isn't much excuse.

Now I must say that I would really love to know what APIs _accounting_ software is using that are hard to update.
