MCAS seems to have been awfully implemented, to say the least.

But it makes you wonder why they didn't consider looking at airspeed as a reasonable safety check that stall was happening?

Increasing airspeed is utterly inconsistent with a high AoA and stall. Also, we do still have gravity. So unless the plane is turning (which gyros can let us know), or accellerating, AoA can be determined (as a sanity check) from the gravitational pull of Earth.
