You guys have to remember that although in the UK and other western countries your ISP's DNS lookups are generally not interfered with, (although the pr0n filters put in place in the UK by some ISPs do block what websites you can access by DNS filtering) in some more authoritarian countries your DNS queries are all logged and monitored and even intercepted so that websites and services that the government doesn't like will be sink holed and a list of IPs trying to access them logged.

If you wanted to you could create your own DOH server using a cheap VPS rather than use the cloudflare services, so you know that your DNS requests were not being logged, there are several tutorials online on how to set one up and you can even run Pi-hole on the same server as well to filter ads.
