One, how can one be sure the one thing a program is doing is actually doing it RIGHT.

The modern answer would be unit tests, which are easier to do on modularized programs. However, the idea that if all the pieces are right, the whole will be bug free is wishful thinking. A lot of bugs creep in at the interfaces.
