    Fascinating ...

    Making cheese is not a walk in the park ... to discover our ancestors were up to it so long ago is incredible. The implications are astounding, since cheese making is analogous to beer (and bread) making.

    The ability to adapt out environment to suit our needs is a unique trait to human species.

      I think you misunderestimate our neolithic ancestors. They were pretty much the same as us - same brains, same noses, same taste buds. They almost certainly tried to store fruit and other perishable and fermentable foodstuffs in pottery vessels - thereby accidentally inventing indigestion as well.

        I listened to an interview with Peter Bogucki. He said that the pots looked very much like the strainer that a friend used in making cheese. He wanted to test them for milk compounds, but the technology was not available to do so at the time.

        As far as indigestion is concerned, he went on to comment that the Neolithic inventors of this technology were mostly lactose intolerant, but that the cheese-making process removes a lot of that sugar, which makes it easier to digest.

    For all our advances.... Some things just don't change. I wonder if in 8000 years time people will still be making chiko rolls (or at least whether the same ones cooked last year will still be sitting in the window by then).

    Actually, cheese was not an important discovery

    until the mid 19th century when Louis-Jacques-Mandé Daguerre invented the camera.
