You are correct that non-disruptive upgrade operations are signs of a mature enterprise platform, and VSAN delivers. The upgrade is non-disruptive, and managed by VSAN (it automatically rotates through the cluster). Virtual machine access is not impacted.

Deduplication and compression in Virtual SAN 6.2 is enabled per cluster.
The process of enabling/disabling deduplication and compression on a Virtual SAN 6.2 cluster is a rolling upgrade and does not incur virtual machine downtime.
