The "until" makes it sound inevitable and therefore prejudiced. The wording with "unless" is therefore better.
A "presumption" of innocence when the police are trying to build a case against them - or the prosecution are in court - is an oxymoron. Neither the police nor the prosecution are presuming the defendants innocence - quite the opposite.
Therefore " innocent unless proven guilty" is the appropriate usage for the spirit of English law.

Expenses - probably far less than the true value as Police expense claims are subject to tight rules and reimbursed below what HMRC consider to be cost. Over time, again less than the overtime actually worked as the first hour is unpaid and everything else rounded down or not paid at all if unauthorised. Realistically there's unlikely to be much associated with a non-urgent case like this and overtime is really just a measure of how overallocated people are, as in any business the real cost is an opportunity cost.
